Chulpi Urbano was born from the dream of a young Ecuadorian chef to pay tribute to Ecuadorian cuisine and culture through a contemporary vision, blending our traditions and customs with the use of modern techniques.
Carlos Saltos, our chef, has been at the helm for eight years since he decided to start his business in a residential neighborhood far from commercial areas. With the same enthusiasm and hunger he had on day one, he has continued to build a legacy, garnering awards and several nominations for the restaurant, but above all, maintaining the affection of you, our customers.
Our inspiration comes from Ecuador's popular gastronomic culture, ranging from markets, street food stalls, and family recipes to forgotten ingredients, which we interpret and translate into our proposal for a new vision of Ecuadorian cuisine through creativity and contemporary techniques.
Our bar is characterized by the use of local ingredients, many of which are part of our culture and were used in our cuisine in ancient times.
Through fermentation, cold maceration, and infusions, we have managed to obtain unique flavors, aromas, and textures with which we want to offer an authentic yet avant-garde experience of the different regions of Ecuador.
Omakase is a vote of confidence between the diner and the chef.
Our chef is responsible for preparing a 6-course menu using his creativity, based on the best we have on the menu, new preparations, experiments by the kitchen team, and secret dishes from the menu.

Reservations must be made at least 48 hours in advance and 50% of the cost must be paid in advance.
We are open Tuesday through Saturday from 1:00 p.m. to 3:30 p.m. and from 6:30 p.m. to 10:30 p.m.
We accept reservations for lunch until 2:20 p.m. and for dinner until 8:45 p.m.
